Since the late 1930s, the Lavergne family has successfully prospered in the accommodation and gastronomy industry. Since 1990, when Pavillon Traiteur was founded, Fabrice Lavergne has devised a journey of flavours to sublimate your events.

The family business, which is set up in Mouans-Sartoux, creates an imaginative, refined cuisine, with top quality service, promoting the French Mediterranean art de vivre as well as the diversity of flavours, the benefits of a balanced diet, using local products and raw materials from environmentally-friendly productions and farms.

Pavillon Traiteur and Côte d’Azur France come together for a catering offer infused with the region’s rich cultural and culinary heritage.

A special wedding menu sublimates local products and shares a passion for Mediterranean cuisine: sea bream ceviche, veal saltimbocca with sage, mountain prosciutto, panisse chips, individual vanilla choux pièce montée…

The menu sublimates local products and shares its passion for Mediterranean cuisine. A journey of flavours which includes hints of the Nice cuisine, sunny hinterland cultures and sea-side traditions, for an extra special day when saying “I do”.

FROM PARIS TO THE CÔTE D’AZUR

It all started in 1929 in Paris, when Virginie and Fabrice Lavergne’s great grandparents, who were great lovers of French traditions, opened a brasserie. Four generations of bakers, restaurateurs and caterers followed, between Paris and the Côte d’Azur.

Today, the Côte d’Azur gastronomy is firmly established in the DNA of the company, which has been controlled by Fabrice Lavergne for several years, who became CEO of Pavillon Traiteur and is a strong advocate for the diversity of flavours in French cuisine, the benefits of a balanced diet, using local products and raw materials from environmentally-friendly productions and farms.
