The multi-faceted actress reveals her madeleines from Nice, from good addresses and typical dishes to the memories that led her to her character Mado.

WHAT’S THE WORLD BETWEEN NOELLE AND MADO?

“I wasn’t born in Nice, but I grew up there, specifically in Vieux-Nice. And the town adopted me straight away.

I remember the Château day-care centre in Vieux-Nice, the carnival corsos in fancy dress, the classical bands that played on Sundays in the Albert 1er garden…

I went from being a local shopkeeper to an actress. With my attachment to the Côte d’Azur, the character of Mado was a natural choice. Since then I’ve been performing on the biggest stages in France and the rest of the world. By the way, I’m the only real ambassador for aqui!

I encourage 100% local, for gastronomy, crafts…

In catering, I gravitate towards signs labelled “Cuisine Niçoise”, there are about twenty in Nice, such as La Cantine de Lulu, rue Alberti.

To find traditional Niçoise editions and in particular my Gazette de Mado, you have to go to the Rontani bookshop, next to the town hall.

A grocery shop I like: Jean de la tomate, a super locavore on Tonduti de l’Escarène. Not forgetting my framer, Renato Suardi in Vieux-Nice: a very creative little craftsman!

3 DISHES NOT TO BE MISSED?

If you want to take a tour of the local specialities, you have to get up early.

But broadly speaking, I’d say the staple is socca.

The one at the Socca d’Or at the Port of Nice, with all its inventive variations.

Then the roasted aubergines from Olive & Artichoke in the heart of Vieux-Nice, a treat.

But it’s impossible to miss the stuffed ones in this top 3, and here I know an address I shouldn’t even give you: A Buteghinna, in one of the entrances to Le Vieux.

Simple, it’s eaten outside on the terrace…
