Unfiltered, unpasteurized, local and certified organic beers from Nice. The word "baieta" means "kiss" in Nice.
The Artisanal Brewery La Baieta is located in the Tinée Valley which leads to the Restefond pass "la bonette" (the highest road pass in Europe). Its craft beers are produced in stainless steel vats and brewed using a fourquet (a kind of beech wood matoire).
The entire manufacturing process is manual. No sugar is added during brewing, only the sugars from the cereals are used in order to obtain a natural beer wort.
Fermentation is carried out in a hot room by the process of refermentation in the bottle.
