Our oil ranges:
- Fruité Vert is an oil made from olives harvested at the very beginning of the season.
- Olives that have reached optimum ripeness are harvested around the third week of November, then put through anaerobic fermentation to obtain what we call "matured olive oil" or fruité noir.
