ROSÉ, DID YOU SAY ROSÉ?
Rosé de Provence, the one loved for its delicate colour and intense fruitiness, was born in the Golfe de Saint-Tropez in the 80s when Régine Sumeire, owner of Château Barbeyrolles, had the idea of cold fermentation vinification for her Pétale de Rose wine – the idea was to gain in aroma without deepening the colour. A great success! Since then, the method has been adopted by the entire Provençal vineyard and although Barbeyrolles is still a classic, other areas of the peninsula, all classified as AOP Côtes de Provence, shine with the quality of their production: La Croix, Torpez, Bertaud-Belieu, Saint-Maur, etc.
