Nestled within the medieval ramparts of Vence, this small restaurant—whose name refers to salt (remember your chemistry class: “NaCl,” the chemical formula for sodium chloride!)—offers authentic, no-nonsense seasonal cuisine. The menu changes depending on what’s available at the market, and the lunch menu is a great deal. The service is friendly.
